Description

Noka at Funan Mall is a modern-Japanese restaurant offering an enticing menu of spirited small plates and omakase, accompanied by a selection of Japanese whisky highballs and artisanal sake. Led by acclaimed Chef Ryan Clift of Tippling Club, known for its innovative cuisine and cocktails, Noka promises a memorable dining experience.

Adjacent to the Urban Farm on the 7th floor of Funan Mall, Noka embraces the concept of "farm-to-table" dining. The restaurant is a collaboration between Spa Esprit Group and Edible Garden City, sister restaurant to Open Farm Community. Spanning over 5,000 square feet, the Urban Farm cultivates more than 50 varieties of produce, supplying fresh ingredients to the restaurants within the mall.

Noka, meaning "farmhouse" in Japanese, is situated right next to the Urban Farm, creating a seamless connexion between the source of the ingredients and the dining table. The restaurant's ambiance transports guests from a modern shopping mall to a serene farm-like setting, with lush greenery visible through its glass walls.

The culinary team at Noka is led by Chef Takuma Seki, a seasoned chef from Niigata, Japan, with extensive international experience, including several years in Singapore. While Japanese cuisine typically relies on imported ingredients, Noka strives to incorporate locally sourced produce whenever possible. This approach ensures that each dish showcases a blend of authentic Japanese flavours and local ingredients, reflecting the restaurant's commitment to supporting regional agriculture.

Noka offers a unique dining experience with its Omakase Chef's Tasting Menu, priced at $150 per person, where Chef Takuma Seki showcases his creativity using the freshest seasonal ingredients. For lunch, guests can enjoy a three-course set menu priced at $45. Snacks, one of the highlights, feature a trio of appetisers made with locally or regionally sourced ingredients, exemplifying the restaurant's dedication to promoting local agriculture.

From Uni Daikon, blending sea urchin and daikon radish, to Snow-Aged Wagyu Nigiri, showcasing Niigata's speciality snow-aged beef, each dish at Noka is an artful fusion of flavours and textures. The desserts, such as Calamansi Mousse, are beautifully presented, providing a sweet yet tangy finale to the meal. Complementing the dining experience, Noka offers an impressive selection of Japanese whisky highballs and carefully curated artisanal sake.

At Noka, guests can indulge in a contemporary Japanese culinary journey while appreciating the synergy between nature, agriculture, and gastronomy.
