Michelin-starred Hototogisu Ramen was established by the passionate and dedicated Chef Atsushi Yamamoto in Tokyo, Japan, in 2006.
This unwavering devotion to his craft has been recognised through a string of prestigious accolades. After earning the revered Tokyo Michelin Bib Gourmand title for four consecutive years from 2015 to 2018, the restaurant received the coveted One Michelin Star in the Tokyo Michelin Guide 2019.
All this was accomplished by a humble ramen shop that started as a modest eight-seat eatery nestled in a quiet Shibuya alleyway.
Hototogisu Ramen's stellar reputation was further solidified when it was proclaimed the "No.1 Ramen in Japan" in both 2017 and 2018 by the popular Japanese publication, Ramen Walker.
Yet, Chef Yamamoto refuses to rest on his laurels.
Continually seeking out fresh and novel ingredients, he dares to challenge traditional norms, always striving to develop outstanding recipes that transcend conventional expectations.
