Kanada-Ya, an internationally recognised ramen restaurant, was inaugurated in the quaint town of Yukuhashi, Fukuoka, Japan in 2009, which also holds the distinction of being Mr Kanada's place of birth.

Since its establishment, the brand has significantly expanded its presence globally, boasting 16 outlets across diverse locations: three in Japan, five in London, two in Hong Kong, one in Spain, and five situated within Singapore.

Acknowledged as the purveyor of London's top-rated ramen, Kanada-Ya's tale commenced upon the closure of a significant chapter in Mr Kanada's personal narrative. Mr Kanada, an erstwhile professional keirin racer, found his sporting career abruptly terminated by a severe shoulder injury.

This high-intensity, brake-free bicycle racing had previously constituted a substantial part of his life.

However, not one to succumb to adversity, Mr Kanada channelled his energy into his next passion - ramen.

Entirely self-taught, Mr Kanada embarked on a culinary quest to perfect the art of tonkotsu ramen.

Over a year of diligent experimentation, filled with pots brimming with evolving broth iterations, finally culminated in the creation of his distinctive, delightful tonkotsu ramen that we have the privilege to enjoy today at Kanada-Ya outlets worldwide.
