Michelin-starred Hototogisu Ramen was founded in 2006 by Chef Atsushi Yamamoto in Tokyo, Japan.

Achieving the honour of being awarded the prestigious One Michelin Star for two years in a row in the Tokyo Michelin Guide 2019 and 2020, it has been a journey for a ramen shop which started out as a humble 8-seater.
